Sweet raspberry and tart lemon brings perfect harmony to this sour cocktail variation that dates back to prohibition days. The Clover Club has stood the test of time making a recent resurgence. 

Ingredients:

60ml Sundays Melbourne Dry Gin
30ml Lemon Juice
20ml Simple Syrup
3 Raspberries
1 Egg White (or Aquafaba for a vegan option)

Method:

Add ingredients to cocktail shaker and shake hard without ice
Top cocktail shaker with ice, shake hard
Double strain to coupe glass

Garnish:

3 Raspberries on cocktail pick
